Beef Short Ribs in a Dutch Oven                Nancy Harrison

Ingredients:
·         3-5 lbs beef short ribs
·         Fresh Thyme
·         Onion
·         Salt and Pepper, Oil
·         Beef Stock
·         Fresh Garlic
O.  One bottle dry red wine


Instructions:
·       
           Prepare the Dutch Oven by heating it over charcoal briquettes
·         Salt and Pepper the meat, add to the pan without crowding and brown on all sides until all meat is browned. Remove to a plate or pan
·         Add chopped onion and cook until translucent, add garlic and cook another minute or two.
·         Add wine & beef broth to the pot, (enough to cover the meat) add the meat, place sprigs of thyme on the meat, and put in the oven to bake at 325*.
·         Bake several hours, adding briquettes to the oven as needed.
·         Add potatoes, carrots and any other vegetable you like for the last hour of cooking.
Y.   This can be made in your oven or a crock pot when not cooking outside on a camping trip (although that’s the best way to enjoy this great meal 😊)
