Cake Nancy Harrison
This is a basic recipe with variations – all time tested and yummy!

Ingredients:
¾ c sugar
¼ c shortening
1 egg
½ c milk
1 ½ flour
2 tsp baking
powder
½ tsp salt
Directions:
Mix sugar,
shortening and egg; stir in milk. Blend
dry ingredients; spread batter in a greased, floured 8 X 8 pan; bake at 375 degrees
25-35 minutes
Variations:
Cinnamon:
Sprinkle ½ c brown
sugar, 1 ½ tsp cinnamon, chopped nuts on top before baking
Blueberry Buckle:
Adjust flour to 2 cups; add 2 c drained canned blueberries to the batter; sprinkle top of cake with
½ c sugar
1/3 c flour
½ tsp cinnamon
¼ c butter
Bake 45-50 minutes
Cinnamon Streusel:
Mix together:
½ c brown sugar
2 T flour
2 tsp cinnamon
2 T butter
½ c chopped nuts
Spread ½ of batter
into pan; sprinkle streusel mixture; add remaining batter and top with streusel;
bake as directed
