Cranberry Nut Bread or Muffins Nancy Harrison
2 c flour
1 c sugar
1 ½ tsp baking
powder
1 tsp salt
1 ½ tsp baking
soda
¼ c shortening
1 tsp grated
orange peel
1 egg, well-beaten
1 c fresh
cranberries, coarsely chopped
½ c chopped nuts
Directions:
Mix orange peel,
juice and egg; add to dry ingredients; fold in cranberries and nuts. Bake in a loaf pan or muffin tin that has
been well greased. Bake at 350 degrees;
15-20 minutes for muffins; 50 minutes for bread. Wrap tightly to store.
