Chicken Parmesan Nancy Harrison
This is an easy dish for supper – everyone loves it!
Season 1 ½ lb
chicken cutlets with salt and pepper
Dip in beaten egg
mixed with a little milk; then breadcrumbs mixed with grated Parmesan cheese
Cook in olive oil
in batches over med-high heat until golden brown
Pour 24-oz jar
marinara sauce in a large shallow pan; top with chicken then 1 pound of mozzarella
cheese and more shredded parm. Add shredded fresh basil after baking.
Bake at 400
degrees until cheese is melted and sauce in bubbly
Serve with pasta
on the side
