Homemade Salad Dressing Nancy Harrison
Measure 3 tablespoons rice vinegar into a
shaker jar
Add a small squeeze of mustard – Dijon or
honey, depending on your taste or the salad you’re dressing
Add a pinch of salt and some fresh ground pepper
Shake up to emulsify
Add 5 tablespoons olive oil and shake to
integrate
You can add different kinds of vinegar,
lemon or lime juice in place of mustard, add a little squeeze of honey, try
them all and find out what you like. This is light and delicious and so much
better than purchased salad dressings.
On our salad this week-end, I used the
recipe above with white balsamic vinegar
