Cranberry Nut Bread Nancy

Ingredients:
2 Cups flour
1 Cup Sugar
1 ½ tsp baking
powder
1 tsp salt
½ tsp baking soda
1 tsp grated
orange rind
¾ cup orange juice
1 egg, beaten
¼ cup shortening
1 cup fresh
cranberries, coarsely chopped
½ cup chopped nuts
Directions:
Put dry
ingredients into a mixing bowl, whisk to combine. Mix wet ingredients in a
second bowl, add to dry ingredients; fold in cranberries and nuts. Place in a well-buttered
loaf pan and bake at 350 degrees for 60 minutes, testing doneness with a
toothpick. After loaf has cooled, wrap tightly to keep moist.
