SOUTHWESTERN BLACK
BEAN PASTA SALAD Nancy Harrison
This tasty meatless pasta salad made with black beans,
tomatoes, corn, chilis is great for any menu spread.
INGREDIENTS:

1/2 cup mayonnaise
·
2 tablespoons lime juice
·
1 1/2 teaspoons chili powder
·
1 teaspoon ground cumin
·
1/2 teaspoon salt
·
8 ounces rotini pasta, uncooked
·
1 can (about 15 1/4 ounces) whole kernel corn, drained
·
1 can (about 15 ounces) black beans, drained and rinsed
·
1 pint grape or cherry tomatoes, halved
·
1 small can (about 4 1/2 ounces) chopped green chiles, drained
DIRECTIONS:
1. Cook pasta according to package
instructions. Drain; set aside.
2. In a large bowl, whisk together
mayonnaise, lime juice, chili powder, cumin and salt.
3. Add cooked pasta and remaining
ingredients; toss to combine and coat pasta.
4. Refrigerate covered until ready to
serve.
