Southwest Pasta, Black Bean Salad


SOUTHWESTERN BLACK BEAN PASTA SALAD  Nancy Harrison
This tasty meatless pasta salad made with black beans, tomatoes, corn, chilis is great for any menu spread.
INGREDIENTS:
·         1/2 cup mayonnaise
·         2 tablespoons lime juice
·         1 1/2 teaspoons chili powder
·         1 teaspoon ground cumin
·         1/2 teaspoon salt
·         8 ounces rotini pasta, uncooked
·         1 can (about 15 1/4 ounces) whole kernel corn, drained
·         1 can (about 15 ounces) black beans, drained and rinsed
·         1 pint grape or cherry tomatoes, halved
·         1 small can (about 4 1/2 ounces) chopped green chiles, drained
DIRECTIONS:
1.     Cook pasta according to package instructions. Drain; set aside.
2.    In a large bowl, whisk together mayonnaise, lime juice, chili powder, cumin and salt.
3.    Add cooked pasta and remaining ingredients; toss to combine and coat pasta.
4.    Refrigerate covered until ready to serve.
