Caramel Corn



Caramel Corn                            Eula Ham

Ingredients

2 c brown sugar
½ c light corn syrup
½ lb butter
¼ tsp cream of tartar
1 tsp salt
1 tsp baking soda
6 quarts of popped corn
Directions:
Combine sugar, syrup, butter, cream of tartar and salt in a large saucepan; heat to boiling, stirring over medium high heat.  Stir constantly; boil rapidly to hard ball stage – 260 degrees; remove from heat; stir in baking soda    quickly and thoroughly.  Pour over popcorn in a large dishpan or roasting pan.  Stir gently to coat; Bake in a 200 degree oven for 1 hour, stirring 2-3 times.
Turn out onto waxed paper; spread apart and allow to cool.  When cool, break apart and store in tightly covered containers.
