Basic Muffins with Variations Nancy Harrison
Ingredients:
1 egg
½ c milk
¼ c vegetable oil
1 ½ c flour
½ c sugar
2 tsp baking
powder
½ tsp salt
1 ½ c flour
½ c sugar
Instructions
Beat egg, stir in
milk and oil; blend dry ingredients and add; stirring only until moistened.
Batter will be lumpy. Bake at 400* 20-25 minutes. Makes 12 muffins
Variations:
Blueberry Muffins:
add 1 cup fresh or ¾ c canned blueberries
Apple Muffins: add
½ tsp cinnamon with dry ingredients; 1 c grated apple with shortening. Bake
25-30 minutes
Streusel Topping:
Mix 1/3 c brown sugar, 1/3 cup chopped nuts, ½ tsp cinnamon with 2-3 TB soft or
melted butter; sprinkle on top before baking
