Mango Chutney Nancy

Ingredients:
2 cup sugar
1 c white vinegar
6 c mangos, peeled
and chopped
1 med chopped
onion
½ c golden raisins
¼ c crystallized
ginger, finely chopped
1 clove garlic,
minced
1 tsp mustard seeds
¼ tsp hot red
chili flakes
Instructions:
Combine sugar and vinegar
in a 6-quart saucepan and heat until sugar is dissolved, and mixture comes to a
boil
Add remaining ingredients
and simmer, uncovered, until thickened and syrupy – 45-60 minutes, stirring occasionally.
Pour into clean,
hot canning jars and process
Makes 6 ½ pint
