Oatmeal
Nut Bars Nancy

½ c butter
¼ c granulated
sugar
1 egg
1 tsp vanilla
½ c flour
½ c oatmeal
¼ tsp salt
½ cup chopped
walnuts
Stir together
sugars and butter; add egg and vanilla and mix. Add dry ingredients – oatmeal and
nuts last. Spread or press into an 8” square pan (or if you double the recipe,
use a 9X13 oblong pan). Bake at 250 degrees for 20-25 minutes. Let cool and ice
with powdered sugar, half and half and vanilla icing. Garnish with additional
chopped nuts.
This recipe was my
dad’s favorite bar cookie recipe; I always think of him when I make them. They are
rich and chewy and delicious!
