Ingredients:

 

2-3 lbs pork stew meat

1 lg yellow onion, diced

2 cloves of garlic, minced

1 Lg can whole or diced tomatoes

Diced green chilis to taste

Salt & Pepper

Chicken Broth

 

Instructions:

 

Sauté pork stew meat and onions along with salt and pepper in vegetable oil until cooked through, adding garlic at the end of the sauté. Place tomatoes, 2 cups chicken broth & green chilis in a blender and blend until tomatoes are broken up and add to the pot. Add additional chicken broth to achieve the texture you want. Add cumin, chili powder and oregano to taste. Simmer to allow the flavors to combine.

 

If you like a thicker stew, mix 1-2 tbsp. of cornstarch with cold water; blend until dissolved and add to the stew, stirring until the broth is clear and thickened.

 

Serve with chopped cilantro.A close up of a box
