Peanut Brittle

 Nancy’s Famous Peanut Brittle                   Nancy Harrison

 

Ingredients:

 

2 c granulated sugar

1 c White Karo syrup

1 c butter

10 -16 oz raw peanuts

1 tsp baking soda

½ c water

 

Instructions:

 

1.      Place water, syrup & sugar in a heavy saucepan. Heat over medium heat, stirring until sugar is dissolved.

2.     Blend in butter when mixture boils; add nuts when temperature reaches 280*

3.     Stir constantly until temp reaches 305*. Remove from heat and stir in soda, mixing thoroughly

4.     Pour out onto two sheet pans, stretching it with two forks. Loosen from pans as soon as possible, turning over and breaking into pieces.

Store in an air-tight container
