My friend Caroline, gave me this recipe after she made them for our car picnic on a wintery drive to Red Feather Lakes, in Northern Colorado. They are so delicious and high fiber and healthy. You will love them too!
Crunchy Veggie Wraps Caroline Ogden
1 whole wheat tortilla
Hummus
Chopped peppers, any color
Shredded carrots
Pepper Jack Cheese, shredded
Hearty salsa made with:
Chili Corn Salsa (Trader Joe's is perfect!)
Black Beans, drained and rinsed
Chopped Marinated Grilled Artichoke Hearts (also at TJ's)
Chopped Kalamata olives
Mix these 4 items together
To make the wrap, heat the tortilla until soft; spread with hummus, chopped veggies; top with salsa and a sprinkle of cheese. Wrap if you can and enjoy these yummy wraps!
