Avocado Chickpea Salad/Sandwich Filling/Spread


Avocado, Chickpea Salad/Sandwich Filling/Spread or Dip

Makes 2 Servings

 Ingredients:

1 can chickpeas

1 large avocado

Fresh squeezed lime juice from one lime

Instructions:

Cut the avocado into pieces

Rinse the chickpeas, popping the skins off if you wish

Using a potato masher, squish the mixture of beans, lime juice, avocado salt and pepper until its as smooth as you want it to be.

This is yummy spread on plain or toasted hearty whole wheat bread. Add spinach, arugula, sliced tomatoes, red onion or other topping of choice.
